Operations Responsibilities

  • Prepare menu items and substitute and required items
  • Ensure proper portion, arrangement, and food garnish
  • Maintain food logs
  • Monitor the quality and quantity of food that is prepared
  • Identify and report excess food item
  • Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist
  • Follow all company and safety and security policies and procedures
  • Good knowledge of Allergens in different types of food
  • Prepare a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi)
  • Prepare all types of sushi, including Maki, Nigiri and Sashimi by expertly cutting, slicing, and filleting different types of fish
  •  Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
  • Manage food prep activities
  • Coordinate with our staff to ensure proper cooking, considering special requests and food allergies
  • Prepare appetizers, soups and salads that are close to the philosophy of Japanese cuisine while recommending new, modern recipes, like sushi burgers
  • Maintain hygiene principles in all cooking areas and clean your space at the end of the shift
  • Inspect the quality of fruits, vegetables, and fish used to prepare sushi dishes
  • Maintain a clean work environment in order to prevent food contamination
  • Regularly check inventory of food supplies and other products, monitor food stock and place orders
  • Report any issues with kitchen equipment to the manager on duty
  • Sterilize all utensils, instruments, and equipment used in sushi preparation before every use
  • Communicate with staff to ensure that special requests and food allergy considerations are met

Qualification, Experience & Skills:

Minimum Qualifications/education

  • High school diploma or equivalent

Minimum Experience

  • 2+ years of related culinary experience
  • Experience working with high volume production


  • Highly organized with strong multitasking skills
  • Adapt in a multicultural environment
  • Excellent listening abilities
  • High attention to detail
  • English (Full professional proficiency - Required); Arabic is preferable
